
There is a legend surrounding the origin of the term 'traditional restaurant', which originally referred to a bale of straw hanging from an inn's sign.
The story goes that while the men slept at the inn, their horses were fed using a bale of straw. A 'bouchon' (stopper) made of straw was then hung on the inn's sign.
These famous Lyonnais bouchons have now become a symbol of good living and good local cuisine.
So, what is a bouchon?
It is a small restaurant where you can eat popular Lyonnais specialities, including many pork dishes, and drink wine in 'Pots Lyonnais'. The atmosphere is renowned for being friendly.
An association called 'Authentiques Bouchons Lyonnais' promotes around twenty establishments that it considers to be among the most authentic. These restaurants can be recognised by the logo of 'Gnafron' (Guignol's sidekick) displayed on the front.
